...Almond Joy Cake...

This is what Heather brought to Recipe Club this month.  It is rich, but really yummy.  I would suggest a little whipped cream (fresh if you've got it!) or ice cream with it...


1 box chocolate cake mix
1 C. evaporated milk
1 C. sugar
24 large marshmallows
1- 14 oz bag sweetened shredded coconut
1/2 C. evaporated milk
1/4 C. butter
1- 12 oz bag milk chocolate chips
1 C. toasted almonds

Bake cake mix according to box directions & poke wholes with the end of a wooden spoon.  In a large saucepan, combine 1 Cup evaporated milk & sugar.  Bring to a boil and stir in marshmallows until melted.  Add coconut & pour mixture over cake while both are hot.
Melt together remaining milk, butter & chocolate chips.  Stir until melted.  Add almonds.  Spread on top of cake.

Ranch Crusted Chicken

8 chicken Breasts
3/4 C. Crushed Corn Flakes
3/4 C. Shredded Parmesan Cheese
1/2 C. melted butter
1 Packet Ranch Dressing Mix

Preheat oven to 350.
Mix together corn flakes, cheese and ranch mix in a medium size bowl and set aside.
In a separate bowl melt butter.
Dip chicken breasts in melted butter then into dry mixture.
Place in greased baking dish and cook, uncovered for 45 minutes!

SUPER YUMMY!!!!

Katie's Tortellini Salad

This is what Katie made last night.  It was really yummy & would be a great side dish for your next BBQ.
4-6 chicken breasts (cubed & soaked in Zesty Italian Dressing)
48 oz. Cheese Tortellini
1 cup Sun Dried Tomatoes, chopped
1 cup Sliced Olives
1 cup Artichoke Hearts, chopped
2 cups Baby Spinach

Mix all together in a large bowl & toss with your favorite Caesar Dressing.  Serve chilled or at room temperature.

...poppy seed chicken...

after I had my little girl, my sister-in-law Nikki brought me this for dinner.  It is so yummy & I have cooked it several times since then.  I hope that you love it as much as me & my family.  I typically don't really love angel hair pasta--but with this dish it is super yummy!

...i love this salad...

This is one of my favorite salads!!! My mom used to make it all the time growing up & passed the recipe on to me. The dressing is perfect!  This one is definitely going to be a hit at your next pot luck!

Orange Creamsicle Salad

Ok so I posted this earlier and now its gone, so I'm posting it again! I have made this salad twice this week for some parties I had to go to, and I have had everyone asked for the recipe, so I decided to to post it! I wish I could claim it as my own, but.. its not! It's my friend Melissa Downs, so thanks Melissa, its a fav at our house!

3 cups water
1 3oz orange jello
2 6oz Cook and serve vanilla pudding
2 large cans of mandrin oranges
1 8oz cool whip (or homeade whip cream if your being motivated)

*In sauce pan heat water til almost boiling and stir in dry ingredients, make sure they dissolve and cook til comes to a full boil and get thick.
Drain oranges really good. When pudding mixture has cooled fold in oranges and put in fridge to cool. When cold, mix in cool whip and refridgerate over night or til set up. Enjoy!

...quick kitchen tip of the week...

so obviously I cook...& you are on this site, so i assume you do too.  I also cook with thing that SMELL...STRONG.  so, my little sis gave me this steel soap & it is amazing.  you just rub it while running your hands under cold water & it gets rid of all the smell...AWSOME!  as much as i love smelling the dinner on my hand all night...it works like a charm!  try it out!
