Recipe from Ina Garten, Barefoot Contessa Family Style
Vegetable Oil
Kosher salt
1 1/2 pounds linguine
6 tablespoons (3/4 stick) unsalted butter
5 tablespoons good olive oil
3 tablespoons minced garlic (9 cloves)
2 pounds large shirmp, peeled and deveined (just buy them that way)
1/2 teaspoon freshly ground black pepper
3/4 cup chopped fresh parsley
Grated zest of 1 lemon
1/2 cup freshly squeezed lemon juice (4 lemons)
1/2 lemon, thinly sliced in half-rounds
1/4 teaspoon hot red pepper flakes
Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.
Meanwhile, in another large, heavy-bottomed pan, melt the butter and olive oil over medium heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 tablespoon of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.
When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.

This is so easy, I promise. If it's not easy I don't do it and Jaxton, my 5 year old loves it! The first time we had it last summer he asked, "Can we have the dinner we had yesternight?"

ReplyDeleteLush, this is my Sunny Saturday go-to recipe. Its easy to sneak veggies into this as well - thin sliced onions and shredded cabbage complement and wrap around the linguine. If you're really brave you can add brocolli as well, but it does rather depend on your audience. It also works really well with Sea Bass, Bream or even just tinned Mackerel. Delicious.

ReplyDeleteI would suggest using a bit less salt! We don't tend to use a lot when cooking, and we found it to be a bit too much. Besides that, excellent!!

ReplyDeleteI found this recipe through pinterest. I omitted the salt, lemon zest, and lemon slices. My family LOVED it, including my picky toddler! I don't think my husband has ever complimented me so much on a meal before. Next time I want to use 100% whole grain linguine. Hopefully they still like it as much once I make that substitution. I never leave comments on blogs, but it was such a hit that I had to this time. Thank you!
ReplyDeleteTo those who are saying it's too much salt, I hope you read that it's 1 tbsp of KOSHER salt and not table salt. Big difference. It tastes perfect with the Kosher salt in the recipe, and I even add a little more at the end.

ReplyDeleteI saw a comment about the salt and I only used salt and pepper before dumping the shrimp in the skillet. I didn't salt or pepper the dish anymore throughout the cooking process and it is seasoned enough.
I hope everyone makes this dish, because it is yummy!

ReplyDeleteI would also suggest using less salt, I made this last night and while it was good, it was too salty and we needed to drink a lot of water with it. I'll make it again with a fraction of the salt called for in this recipe.

ReplyDeleteI desperately wanted to love this recipe, but it was quite a bit of lemon. I did read all the reviews, and I cut down on the salt, which maybe wasn't a good idea. I actually took a half a stick of regular salted butter and added it to the mixture before I served it, and I still felt like something was missing. This recipe was a great start, but I think next time I'll use salted butter, less (about 1/4-1/2) of the lemon, add more garlic, and possibly top it with some fresh parmesan.
ReplyDeleteDelicious! Had to do a little variation for mine. Used bottled lemon juice, also didn't have garlic so I used garlic salt. Threw in some mushrooms and mixed veggies. Added a little sour cream to the sauce to make it a bit creamier.
